ASIAN BEEF AND PEPPERS

Servings: 4
Ingredients
• 2 Tbsp. reduced sodium soy sauce
• 2 Tbsp. water
• 1 Tsp. sesame oil
• 1 clove fresh garlic, crushed
• 1 Tsp. Dijon mustard
• 1 Tsp. ground ginger
• 1 lb. natural sirloin steak or flank steak, sliced thin
• 1/2 red bell pepper, sliced thin
• 1/2 green bell pepper, sliced thin
• 1 medium onions, sliced thin
• 1 Tsp. toasted sesame seeds
• 2 C. cooked brown rice
Instructions
Blend first six ingredients and place in a large zip-loc bag. Add sliced meat and stir to coat. Mix in peppers and onions. Spray pan with non-stick cooking spray. Stir fry over medium high heat until meat is cooked to desired doneness. Garnish with sesame seeds. Divide the meat mixture into four portions and serve each serving over 1/2 C. of brown rice. The servings can be frozen individually.
One Serving: 1/4 of beef mixture and 1/2 C. of brown rice
